Recipe Of The Month: Creamy Pesto Chicken Salad
Ingredients:
- 1 lbs chicken breast
- ¼ cup pesto
- ¼ cup mayonnaise
- 3 tbsp chopped red onion
- 2 tbsp extra-virgin olive oil
- 2 tbsp red wine vinegar
- pinch of salt and pepper
- 8 cups mixed greens
- 1 pint of cherry tomatoes
Directions:
- Cover the bottom of a medium saucepan with water and add the chicken breast.
- Bring to a boil until the chicken is cooked all the way through (10-15 minutes).
- Allow time for the chicken to cool and then shred it into bite-sized pieces.
- Combine the pesto, mayonnaise, and onion in a bowl. Add the chicken pieces and toss until fully coated.
- Whisk the oil, vinegar, salt, and pepper into a large bowl. Add the greens and tomatoes and toss.
- Portion the greens mixture and top with the chicken salad.
