August has arrived, bringing with it our Summer Health and Wellness Initiative! As you are aware, our focus this season is on incorporating wellness into all areas of our lives. Health goes beyond just physical functions and habits. This initiative aims to encourage you to adopt healthy goals and habits, allowing you to engage at whatever level feels comfortable for you—whether that’s being highly involved or keeping it more relaxed.

Goals aren’t only beneficial when you meet them. Each part of the process–making, working towards, and meeting– the goal has its long-lasting values. Committing to a goal strengthens your sense of discipline. Each day that you work towards your goal, small habits are created that turn into long-term benefits. Feelings of purpose, motivation, and self-awareness can be built through working towards something meaningful. Seeing progression can boost energy, mood, and overall well-being. By taking it one day at a time, small progress can fuel personal growth.

RECIPE OF THE MONTH: PINEAPPLE CHICKEN STIR-FRY

Ingredients:

  • 1 ½ pounds boneless, skinless chicken breasts (cut into 1-inch pieces)
  • 1 ½ cups of pineapple chunks (canned)
  • 1 bell pepper, diced
  • 1 onion, diced
  • 1 tbsp vegetable oil
  • 2 cloves garlic, minced
  • 1 tsp minced ginger
  • ½ cup sliced green onions
  • ½ tsp sesame seeds
  • salt and pepper (to taste)

For the Sauce:

  • ½ cup pineapple juice (from canned pineapple)
  • ⅓ cup chicken broth
  • ¼ cup honey
  • 2 tbsp hoisin sauce
  • 2 tbsp soy sauce
  • 2 tsp rice vinegar
  • 2 tsp cornstarch

Directions:

  • Combine all of the sauce ingredients in a bowl. Mix well, then set aside.
  • Season the chicken pieces with salt and pepper. In a large skillet, heat the olive oil over high heat. Add the chicken and cook until browned on all sides, 5-6 minutes.
  • Add the bell pepper and onion to the skillet and cook with the chicken for 2 minutes.
  • Stir in the garlic and ginger. Cook for about 1 minute.
  • Add in the pineapple chunks and cook for an additional 2 minutes.
  • Pour in the stir-fry sauce and allow it to bubble and thicken while stirring occasionally, about 5- 6 minutes.
  • Remove from the heat and stir in half of the green onions.
  • Serve over steamed rice, quinoa, roasted potatoes, or any other veggies!
  • Garnish with the remaining green onions and sesame seeds.
